Plant Based Diet

For many years, I have been wanting to follow a vegan diet or at least vegetarian. I never seem to be able to follow it though. I love my meat and especially my beef, I always have. I know that my current way of eating is not the healthy way I should be eating. I also know that I need to make a lot of changes to the way I eat.

I honestly believe a lot of us eat too much meat, I know I do and a lot of people I know do also. I also know a decent amount of people that eat a plant based diet. Personally, I like the term plant based diet over vegan diet because it, in my mind, sounds more like it’s about what I eat instead of what I wear. While I believe that what we wear (when it comes to environmental impact) plays an important role in life, for me, it’s the food I eat that is most important.

There are some places that I have learned about in the past, when it comes to plant based blogs and recipes, forks over knives, Oh, she glows, Post punk kitchen, Thug kitchen, and more that I can’t think of right now. My goal is to follow these blogs and try some new recipes. I know that eating less meat is going to be healthier for me for my weight, for my high blood pressure, for my cancer risk, as well as hopefully helping with post nasal drip issues that make it difficult to sleep, and in general just a healthier way to eat. While I know that some people feel the exact opposite, I feel like now, it is time for me to move to a plant based diet, especially when it comes to dairy. It will probably be a slow process and that is probably a good way for me. It doesn’t need to be an all or nothing way of eating. I may find that I need to eat meat at times or maybe it’s easier to just eat what is provided for me, think holidays where people aren’t plant based, and that is ok.

I like my veggies and kale is one of my favorites. I like my squashes and root veggies. I like rice and other whole grains. I like beans and need to eat them more often. I need to drink more water and really focus on that. It is going to be hard to give up my half and half in my coffee, cheese, ice cream and other dairy products. I know that I can give up ice cream, as much as I like it, I don’t have it all the time. Coffee creamer is always the hardest for me. I haven’t been able to find a really good creay creamer that is vegan/plant based/dairy free. Today, I used Califia Farms eggnog, and while it was a little too sweet, it wasn’t bad and I drank my whole 20 oz cup of coffee. I bought a couple of other creamers tonight and will keep trying to find ones that I like. I am trying nut pods for the first time and it is a mocha peppermint flavor. I am really looking forward to trying that one.

Do you eat a plant based or vegan diet? Do you find that it helps you feel better? Do you have favorite blogs, cookbooks, podcasts, foods? Do you have a favorite coffee creamer and other dairy free alternatives. I have been following the “plant yourself” podcast and listened to one today that inspired me to be hopeful that getting rid of dairy is going to help my allegies, my skin, my energy, my brain fog, and I sure so much else. Wish me luck in making these changes.

Namaste,

Amy
